Halibut w/lemon butter sauce and asparagus

Ingredients:

Juice of 1 lemon, 1/4 cup olive oil, 1 teaspoon salt, 1 teaspoon black pepper, 2 finely minced garlic cloves or 1 teaspoon garlic powder, 2 halibut fillets skinned and deboned, 8 tablespoons (1 stick) unsalted room temp. butter, zest and juice of 1 lemon, 1/4 cup minced fresh parsley.

Asparagus: 

1 tablespoon olive oil, 1/2 teaspoon garlic salt, 1/2 teaspoon black pepper

Recipe:

In a medium bowl, whisk together the juice of 1 lemon, olive oil, salt, pepper and garlic. Add the fish to the marinade bowl, cover and place in refrigerator for at least 30 minutes or overnight.

Prepare a baking sheet with foil and turn oven to bake at 400. Cut the ends of the asparagus (about 1 inch), then place asparagus in colander and wash off. Pat dry. Add asparagus to the baking sheet and add about 1 tablespoon olive oil to the asparagus. Add 1/2 teaspoon garlic salt and 1/2 teaspoon of black pepper to the asparagus. Rub in the olive oil, garlic salt and pepper onto the asparagus and put baking sheet into the oven for about 30 minutes.

In a small bowl, use a fork to mash together 4 tablespoons of the butter, the zest and juice of 1 lemon, and the parsley. This will create a thicker sauce than the marinade.

In a large skillet over medium heat, melt the remaining 4 tablespoons of butter. Remove the fish from the marinade, allowing the excess sauce to drip off. Place the fish in the skillet and cook approximately 3 – 5 minutes per side, until cooked through and it flakes easily when pulled with a fork. Remove from heat and top with a scoop of the lemon butter mixture. Serve immediately.

Chicken Satay

Ingredients:

Zest and juice of 1 lime, 2 tablespoons fish sauce, 2 tablespoons honey 2 tablespoons coconut aminos or soy sauce, 1/2 teaspoon curry powder, 1 teaspoon garlic powder,  1/2 teaspoon of salt, 1 teaspoon of pepper, 1 pound of boneless, skinless chicken breast.

1 batch of Satay Peanut Dipping Sauce.

Satay Peanut Dipping Sauce: 1/4 cup peanut butter (SunButter or Cashew Butter), 2 tablespoons honey, 2 tablespoons coconut aminos, Zest and juice of 1 lime, 1/2 teaspoon fish sauce, 1 teaspoon garlic powder.

Recipe:

In a small bowl, whisk together the lime zest, lime juice, fish sauce, honey, curry powder, garlic powder, coconut aminos, salt and pepper.

Slice the chicken into roughly 1-inch long strips against the grain. Place the chicken strips in a wide dish and pour the marinade over to coat. Cover and refrigerate for at least 2 hours but preferably overnight.

Preheat a grill pan or a grill to medium heat. Place the chicken on the grill for 3 to 4 minutes per side, until cooked through. Serve with white or brown rice and the peanut dipping sauce.

Dipping Sauce:

Place all of the ingredients in a blender and puree until smooth.

Ingredients

1 10 oz bag frozen mixed berries (strawberries, raspberries, blackberries and blueberries)
1 cup non-fat frozen yogurt
1 cup Vanilla Almond Milk
2 tablespoon flaxseed

Directions

    1. In a blender, puree the frozen mixed berries, yogurt, milk, flaxseed
    2. Pour into glasses and serve.

Recipe Note: Add more milk if you wish to have a more liquid smoothie. I like my smoothies to be like a milk shake though!

Oatmeal Cupcakes

These are the best “cupcakes” ever! They are addictive and you wont be able to eat just one.  I usually make them with the chocolate chips but I have used all types of different add ons. You can try anything you like, some examples of what we use are cranberries, nuts, raisins.

Oatmeal Cupcakes: 3 mashed bananas (the riper the better!), 1 cup vanilla almond milk, 2 eggs, 1 tbsp baking powder, 3 cups oats, 1 tsp vanilla extract, 3 tbsp mini chocolate chips ******** 1. Preheat oven to 375 degrees. 2. Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans. 3. Spray a muffin pan with non-stick spray. 4. Stir the chocolate chips into the oatmeal batter. 5. Divide batter into 15 muffin cups. They should be just about filled.
